Mrs. M's Special Recipes...Salmon with Spring Onion SauceNotes from Mrs. MI looked through the previous recipes I've passed on to you all, and was horrified to see the lack of fish dishes I've done. Fish is good for the heart, and apparently it's good for the brain as well! It is also very good for you and extremely tasty! This dish is easy and quick to prepare but very impressive if you have guests around! I recommend that you serve it with some nice stir-fried vegetables and/ or noodles. Ingredients300g (12 oz) rice 450g (1 lb) fresh salmon fillets 1/2 teaspoon freshly ground white or black pepper 5 tablespoons coarsely chopped spring onions 1 tablespoon finely chopped fresh root ginger 1 1/2 tablespoons sunflower oil 1 teaspoon sesame oil Method:1) Rub the salmon fillets with half of the pepper. 2) Bring 600ml (1 pint) of water to simmer in a pan. 3) Add the salmon, simmer until cooked. 4) Combine the spring onions, ginger and remaining seasonings in a small bowl. 5) Combine with the oils in a wok and heat. 6) Remove the salmon from the water and place on plate, then pour the sauce over the salmon and serve.
